À propos de NIXX

Nick a passé la majeure partie de sa carrière comme maitre écailler, a ouvrir des huitres , travaillant face à face avec les gens et portant une attention particulière à la façon dont la saveur change un plat. C’est cette expérience qui l’a d’abord poussé à faire ses propres sauces. Il voulait quelque chose de plus lumineux, plus équilibré et plus intéressant que ce qu’il voyait a l'entour. 

Alors il a commencé à faire de la sauce piquante à la maison. Pas de plan d’affaires, pas de branding, juste de la curiosité et la volonté de faire quelque chose qui ait le bon goût. Il apportait les sauces pour que les clients les essaient et la réponse était toujours la même, les gens les adoraient sincèrement. C'est ca qui l'as gardé motivé.

Il ne s’est pas précipité. Il a fallu quelques années d’essais et d’erreurs pour comprendre comment les ingrédients interagissent, comment la chaleur devrait être ressentie, comment l’acidité élève une sauce, et comment créer une saveur qui reste constante d’une batch à l’autre. Certaines tentatives ont fonctionné, d’autres non, mais chacune a poussé le produit vers l’avant.

Finalement, tout s’est mis en place. La technique, l’équilibre, la saveur, les sauces avaient enfin le goût qu’il avait imaginé. C’est comme ça que tout a commencé.

Aujourd’hui, Nick se concentre sur la fabrication de sauces rafinée et de haute qualité, conçues avec patience, intention et respect du travail. Pas de raccourcis, pas de précipitation, juste des saveurs dont il est fier de partager.
