About NIXX
Nick spent most of his career as a professional oyster shucker working face to face with people and paying close attention to how flavour changes a dish. That experience is what first pushed him toward making his own sauces. He wanted something brighter more balanced and more interesting than what he was seeing out there.
So he started making hot sauce at home. No business plan no branding just curiosity and the drive to make something that tasted right. He would bring the sauces in for clients to try and the response was always the same people genuinely loved them. That’s what kept him going.
He didn’t rush it. It took a couple of years of real trial and error to understand how ingredients interact how heat should feel how acidity lifts a sauce and how to build flavour that stays consistent from batch to batch. Some attempts worked many didn’t but each one pushed the product forward.
Eventually everything came together. The technique the balance the flavour the sauces finally tasted the way he imagined they should. That’s how this started.
Today Nick focuses on making clean high quality sauces built with patience intention and respect for the work. No shortcuts no rushing just flavor's he’s proud to share.
